Ground Dried Lime

Limes that are sun-dried until rock-hard and ground to a spice. Sharp and aromatic, you can sprinkle the fine powder onto rice or grain salads or add it to a marinade for chicken. It works as a substitute for sumac due to its similar flavour profile. Once you have it in your pantry, you're pretty much set; whether whole or ground, a little dried lime goes a long way.
